Ingredients

For the Bulgogi Beef

500g thinly sliced beef (such as ribeye or sirloin)
1/2 cup Bulgogi marinade (store-bought or homemade)
Two cloves garlic, minced
2 tablespoons of soy sauce
Two tablespoons brown sugar
One tablespoon of sesame oil
Salt and pepper to taste

Spring Rolls

Rice paper wrappers
Vermicelli noodles, cooked according to package instructions
Shredded lettuce
Matchstick carrots
Thinly sliced cucumber
Fresh herbs (such as mint, cilantro, and Thai basil)
Optional: sliced avocado, bell peppers, or mango

Sweet Ssamjang Sauce

1/4 cup ssamjang (Korean spicy dipping sauce)
Two tablespoons honey
One tablespoon of rice vinegar
1 tablespoon of sesame oil
One tablespoon water
Toasted sesame seeds (for garnish)

Prepare the Bulgogi Beef: Mix thinly sliced beef with Bulgogi marinade, minced garlic, soy sauce, brown sugar, sesame oil, salt, and pepper in a bowl. Ensure the meat is well coated in the marinade. Cover and refrigerate for at least 1 hour, preferably overnight, to let the flavors blend.

Cook the Bulgogi Beef: Heat a skillet or grill pan over medium-high heat. Cook the marinated beef slices on each side for 2-3 minutes or until they are caramelized and cooked to your desired level of doneness. Remove from heat and set aside.

Prepare the Spring Roll Ingredients: Prepare all the ingredients for the spring rolls, including cooked vermicelli noodles, shredded lettuce, matchstick carrots, thinly sliced cucumber, fresh herbs, and any optional ingredients you desire. Arrange them in separate bowls for easy assembly.

Soften the Rice Paper Wrappers: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water and rotate it for a few seconds until it softens. Remove the wrapper from the water and place it on a clean, damp kitchen towel.

Assemble the Spring Rolls: Place a few slices of cooked Bulgogi beef in the center of the softened rice paper wrapper. Add a small handful of cooked vermicelli noodles, shredded lettuce, matchstick carrots, thinly sliced cucumber, fresh herbs, and any optional ingredients you desire on top of the beef.

Roll the Spring Rolls: Fold the bottom edge of the rice paper wrapper over the filling, then fold in the sides and roll tightly to enclose the filling completely. Repeat this process with the remaining ingredients.

Prepare the Sweet Ssamjang Sauce: In a small bowl, whisk together ssamjang, honey, rice vinegar, sesame oil, and water until smooth and well combined.
