Recipe

Experience the comforting warmth of Galbitang, a beloved Korean classic renowned for its tender beef short ribs and flavorful broth. Each spoonful invites you to savour this iconic soup’s rich flavours and wholesome goodness, taking you on a journey of tradition and comfort.

Ingredients

1 kg beef short ribs, cut into pieces
10 cups water
One onion, halved
Four cloves garlic smashed
Four green onions, cut into large pieces
One daikon radish, peeled and sliced
Two carrots, peeled and sliced
One tablespoon of soy sauce
Salt and pepper to taste
Chopped green onions for garnish
Cooked rice for serving

Execution

01

Prepare the Beef Short Ribs: Rinse the beef short ribs under cold water to remove bone fragments or blood. Please place them in a large pot.

02

Simmer the Broth: Add water and the beef short ribs to the pot. Bring to a boil over high heat, then reduce the heat to low and let it simmer gently for 1.5 to 2 hours or until the beef is tender and the broth is flavorful.

03

Add Aromatics and Vegetables: Add the halved onion, smashed garlic cloves, green onions, daikon radish, and carrots to the pot. Simmer the soup for another 30 minutes to let the vegetables soften and the flavours meld.

04

Season the Soup: Season the soup with soy sauce, salt, and pepper to taste. Adjust the seasoning according to your preference.

05

Serve: Dip the hot galbitang into bowls. Garnish with chopped green onions. Serve with cooked rice on the side.

Additional Tips

  • To achieve a clearer broth, skim off any foam or impurities that rise to the surface of the soup during the cooking process.
  • Galbitang is traditionally served with a bowl of steamed rice on the side, but it is also a hearty meal that can be enjoyed on its own.
