Grilled Gochujang Chicken is a beloved Korean dish, showcasing tender chicken infused with a delightful blend of spicy-sweet Gochujang sauce, perfectly grilled to create an irresistible flavour balance.

Ingredients

1 kg chicken pieces (legs, thighs, wings, breasts, or a combination)
1/2 cup gochujang sauce
2 tablespoons of soy sauce
2 tablespoons brown sugar or honey
2 tablespoons garlic, chopped
1 tablespoon grated ginger
1 tablespoon of vegetable oil
1 teaspoon black pepper
Salt to taste
Optional: sliced green onions for garnish

Prepare Marinade: Mix Gochujang sauce, soy sauce, honey, minced garlic, vegetable oil, salt, and pepper in a bowl to create the marinade.

Marinate Chicken:Place the chicken pieces in a large resealable plastic bag or a shallow dish.

Refrigerate: Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate to marinate for at least 1 hour, preferably overnight.

Preheat Grill: Preheat your grill to medium-high heat.

Rest Chicken: Remove the marinated chicken from the refrigerator and let it sit at room temperature for about 15 minutes.

Grill Chicken: Place the chicken pieces on the preheated grill, leaving some space between them.

Cook Chicken: Grill the chicken for 6-8 minutes on each side, or until it’s cooked through and the juices run clear, with an internal temperature of 165°F (75°C).

Serve Hot: Once cooked, remove the chicken from the grill and transfer it to a serving platter.

Tips

  • You can make the sauce spicier or milder by adding more or less gochujang sauce.
  • Before grilling, make sure to oil the grill grates to stop the chicken from sticking.
  • Let the chicken sit for a bit before serving so the juices spread out evenly.
