Imagine juicy beef short ribs marinated in a compelling blend of Korean-inspired spices and sauces, then lovingly cooked to perfection in the Instant Pot.

Ingredients

1.5 kg beef short ribs
1/2 cup soy sauce
1/4 cup brown sugar
1/4 cup rice vinegar
Four cloves garlic, minced
One tablespoon grated ginger
Two tablespoons of sesame oil
Two tablespoons gochujang (Korean chili paste)
One onion, thinly sliced
Two green onions, chopped (for garnish)
Toasted sesame seeds (for garnish)
Cooked rice for serving

Prepare the Short Ribs: Rinse the beef short ribs under cold water and pat them dry with paper towels. Trim any excess fat from the ribs if desired.

Make the Marinade: In a bowl, whisk together soy sauce, brown sugar, rice vinegar, minced garlic, grated ginger, sesame oil, and gochujang until well combined.

Marinate the Ribs: Place the beef short ribs in a large resealable plastic bag or a shallow dish. Pour the marinade over the ribs, ensuring that they are evenly coated. Marinate in the refrigerator for at least 1 hour, preferably overnight, to allow the flavors to meld and the meat to tenderize.

Pressure Cook the Ribs: Transfer the marinated short ribs and sliced onion to the Instant Pot. Close the lid and set the Instant Pot to “Manual” mode on high pressure for 35-40 minutes, depending on the thickness of the ribs.

Natural Release: Once the cooking cycle is complete, allow the Instant Pot to release pressure for 10-15 minutes naturally. Then, carefully release any remaining pressure manually.

Serve: Carefully remove the cooked short ribs from the Instant Pot and transfer them to a serving platter. Garnish with chopped green onions and toasted sesame seeds. Serve hot with cooked rice on the side.
