Korean Chicken Skewers(Dakkochi) Recipe

The flavorful skewers are a popular street food in Korea, offering a compelling blend of spicy, sweet, and smoky flavours.

Ingredients

500g boneless, skinless chicken thighs cut into bite-sized pieces
1/4 cup soy sauce
Two tablespoons honey
One tablespoon of brown sugar
Two cloves garlic, chopped
One tablespoon of sesame oil
One tablespoon gochujang (Korean red pepper paste)
One tablespoon of rice vinegar
One teaspoon of grated ginger
Wooden skewers, soaked in water for 30 minutes

Execution

Prepare Marinade: To make the marinade, whisk together soy sauce, honey, brown sugar, minced garlic, sesame oil, gochujang, rice vinegar, and grated ginger in a bowl.

Marinate Chicken: Add the chicken thigh pieces to the marinade and toss until well coated. Cover the bowl and let it marinate in the refrigerator for at least 1 hour or overnight for the best flavour.

Preheat Grill: Preheat the grill to medium-high heat.

Skewer Chicken: Thread the marinated chicken pieces onto the soaked wooden skewers, dividing evenly.

Grill Skewers: Grill the skewers on each side for 6-8 minutes or until the chicken is cooked and slightly charred on the edges.
