Spicy Chicken Quesadilla

Recipe

To make our spicy chicken quesadilla, we cook seasoned chicken until it is juicy, then layer it with cheese between tortillas. We grill until crispy, then add spicy gochujang salsa for a flavorful kick.

Ingredients

For the spicy chicken

One lb. boneless, skinless chicken breast, thinly sliced
One tablespoon of olive oil
One teaspoon of chili powder
One teaspoon paprika
1/2 teaspoon cumin
To taste, add salt and pepper

For the Gochujang Salsa

Two tomatoes, diced
1/2 onion, finely chopped
1/4 cup fresh cilantro, chopped
Two tablespoons gochujang (Korean chili paste)
One lime’s juice
Salt to taste

For the Quesadillas

Eight large flour tortillas
One tablespoon of vegetable oil
2 cups shredded Mexican cheese blend

Marinate the Chicken: In a bowl, combine thinly sliced chicken breasts with olive oil, chili powder, paprika, cumin, salt, and pepper. Mix everything well to ensure the chicken is evenly coated. Let it marinate for at least 15 minutes.

Prepare the Gochujang Salsa: In a separate bowl, mix diced tomatoes, chopped onion, cilantro, gochujang, lime juice, and salt. Stir until all the ingredients are well combined. Set the salsa aside for later use.

Cook the Chicken: Heat a skillet over medium-high heat. Once hot, add the marinated chicken slices to the skillet. Cook them for 5–6 minutes until fully cooked and slightly browned. Once cooked, remove the chicken from the heat and set it aside.

Assemble the Quesadillas: Place four tortillas on a clean surface. Sprinkle shredded cheese on each, add cooked chicken slices and gochujang salsa, and top with another tortilla.

Cook the Quesadillas: Heat a large skillet or griddle over medium heat and add a small amount of vegetable oil. Carefully transfer the assembled quesadillas to the skillet or griddle. Cook them on each side for 2-3 minutes until they turn golden brown and crispy and the cheese melts.

Repeat the Process: If you have remaining tortillas and filling ingredients, repeat the assembly and cooking process until all the quesadillas are prepared.

Slice and Serve: Once the quesadillas are cooked, remove them from the skillet or griddle and cool for a minute. Then, use a pizza cutter or sharp knife to cut each quesadilla into wedges. Serve the slices with hot gochujang salsa on the side, and enjoy your delicious meal.
